When visiting different country and culture we like to try as much of traditional food as we can. While visiting Sri Lanka we got to try curry for the first time and we fell in love. We got the opportunity to learn how to cook it firsthand and if you want to try a bit of Sri Lanka, here is the recipe.

You can make curry from:

  • chicken
  • potatoes
  • beetroot
  • green beans
  • eggplant
  • pumpkin

Ingredients for curry:

  • 1 tsp curry powder
  • 1 tsp roasted curry powder
  • 1 tbsp chilly powder
  • 1 tbsp turmeric
  • 1 tps cinnamon
  • 4 shallots
  • 4 cloves garlic
  • 1 tomato
  • 6 pcs curry leaves
  • 4 pcs papadam leaves
  • 1 cup coconut milk
  • 6 pcs lemongrass

Add the sesame oil or coconut oil to a large saucepan and heat the oil. Add shallots, garlic and cook until softened. Add the main ingredient for your curry, we’ll add chicken, then add all the spices. Cook until the meat is not pink anymore.

Add the rest of the ingredients and coconut milk. Turn the heat down, cover the pan and leave it simmer for 1/2 hour, stirring occasionally.

Serve it with white rice or stir fried rice. Use leftovers for Sri Lankan Kottu Rotti.
